  • 1/2 large white cabbage
  • 3 carrots
  • 2 large onions
  • 3 sticks of celery
  • 1 tin of chopped tomatoes
  • 1000ml of stock (use 1 1/2 veg stock cubes)
  • 5-6 cloves of crushed garlic
  • 1 1/2 tbsp of dried mixed herbs
  • 1/2 tsp pepper

  1. First dice the onion into medium chunks. Shred the cabbage finely and cut the carrot and celery into normal slices.
  2. In a large soup pot, pour the 1000ml of water and boil. When boiled, add the stock cubes, chopped tomatoes, pepper and herbs. Stir well. Turn to a medium heat and add all the vegetables and crushed garlic and simmer for 25-30 mins, till the vegetables have softened. Serve warm.

Weight Loss Cabbage Soup is an easy vegetable soup that’s great for dieting but still flavorful, comforting, and filling—made in just 30 minutes.

This Soup Recipe is even healthier and easier than Classic Cabbage Soup but is also delicious and enjoyable.


Weight Loss Cabbage Soup is also known as Diet Soup, Wonder Soup, or GM Diet Wonder Soup. This Cabbage Soup is the central part of an eating plan that has been around for years enjoying unlimited Cabbage Soup throughout. (Note: we are not advocating to be nutrition professionals OR advocating that you follow a specific diet. We just wanted to offer the recipe and give you the background of it.)

Wonder Soup makes a great starting point for healthy eating because it’s low in calories, nutrient-dense, fat-free, and sugar-free.

Hearing all that, you might be starting to picture an awfully bland soup, but luckily the flavorful ingredients like cabbage, garlic, tomatoes, basil, and oregano give this broth-based Cabbage Soup an excellent taste while remaining low-calorie. This is a delicious soup that you can enjoy for an easy healthy meal once in a while. If you just have Cabbage Soup as a regular dinner, you can make some Soft Rolls to go along with it for a comforting meal.

Prepping the Wonder Soup

If you’re meal prepping this soup for the whole week, it’s a great idea to get soup prepped in advance. The last thing you want is to have to chop up all the vegetables then wait for the soup to heat up when you’re already hungry.

How to Make Cabbage Soup:

This soup is very easy to make and requires few ingredients.

Heat the olive oil in a large stock pot over medium heat. Saute the onions until they are soft. (This step helps bring out the flavor more, as well as ensure that you don’t have crunchy onions in your soup.)

Add in the chopped celery and carrots and cook for another 3-4 minutes, followed by the garlic. Let the garlic cook with the veggies for about 30 seconds or until you can really smell it.

Next you can toss in the remaining soup ingredients (cabbage, tomatoes, broth, and seasonings). Bring it all to a boil and then turn it to low, cover, and allow it to simmer for 10-15 minutes or until the cabbage wilts.

Ladle the soup into bowls and garnish it with some fresh Italian parsley and shaved Parmesan. (I prefer Parmigiano Reggiano.)

Can this be made in the crock pot? Yes! Cook up the onions, celery and carrots as directed and then add all the remaining ingredients to the slow cooker and cook on LOW for 3-4 hours or on HIGH for 1-2 hours.

Can I use different vegetables?

Of course! This is actually a great soup to make when you need to clean out the fridge and use up leftover veggies. Chop up and toss in whatever you’ve got. For firmer veggies, add them in with the carrots and celery. Add vegetables like broccoli and cauliflower in with the cabbage.

How to add more flavor to soup:

If you like a stronger flavor soup you can always add more spices or even various other vegetables. For this soup, a super easy way to add flavor is to toss in a Parmesan rind. It has all the flavor of the cheese but isn’t actually eaten due to the hard texture. This is a great way to decrease your waste and enjoy your food even more! Every time you use up a fresh wedge of parm, toss the rind in a bag and freeze it for adding to your soups.

How to store cabbage soup?

We recommend placing it in a sealed tupperware and placing in the fridge. It should last 4-5 days. To reheat, throw back into a pot on the stove or use the microwave to heat through.

How to freeze cabbage soup?

Place the leftover soup in an air-tight container and freeze for 2-3 months. Place in the fridge to thaw overnight and then reheat on the stove or in the microwave. You can also add any cooked meat when reheating to add more flavor.

How to Make Weight Watchers Soup with Cabbage

Sauté the aromatics with cooking spray instead of oil. Browning the onion, garlic and mushrooms in a spritz of cooking spray instead of tablespoons of oil saves fat and calories while still adding savory depth to the broth.

Use tomato juice for the soup base. Unlike canned tomatoes, tomato juice adds a zippy tomato flavor to this soup that doesn’t depend on a lot of cooking time to develop. Use regular tomato juice, or V-8 vegetable juice blend if desired.

What is in Cabbage Soup?

The main ingredient of cabbage soup is well&hellip cabbage! Besides a whole head of cabbage, we use onion, garlic, carrots, diced tomatoes, chicken broth and some spices for taste.

Note: If you want to make it vegetarian simply swap the chicken broth for vegetable broth &ndash it&rsquos that easy!

In a large soup pot sauté the onion and garlic in olive oil until it smells good and lightly browns.

Add in chicken broth, salt, pepper and basil, stir.

Add in your vegetables: cabbage, carrots and a can of diced tomatoes. No need to drain those tomatoes! Bring to a boil and then simmer for 1 hour.

Extra special tip: Make homemade diced tomatoes!

Serve the soup in bowls and add a sprinkle of Parmesan cheese on top (optional, but highly recommended!). Enjoy!

Like many other cruciferous vegetables (think broccoli, kale, and cauliflower), cabbage is chock-full of vitamins and minerals.
