Hello, I'm coming up with another blackberry recipe this time with Oreo cookies. As you can see, blackberries are among my favorites, because they go very well with a good coffee. It is a more select blackberry, due to the content of dark chocolate and brown sugar. Having more yolks than egg whites in the composition, it is denser. It has an extraordinary taste. a real cake, fine and tasty.

165g butter
200g dark chocolate
3 eggs
2 yolks
165g brown sugar
2 lg flour
1 lg cocoa
a pinch of salt
100g Oreo biscuits

Method of preparation:
Preheat the oven to 180 degrees (average temperature). Grease with butter and line with baking paper a rectangular tray with dimensions of 25x15cm.
Chopped chocolate and butter melt together on a steam bath (bain-marie).
The 3 eggs together with the 2 yolks are mixed with the sugar. Sift the flour and cocoa and mix with a pinch of salt. Over the mixed eggs add the melted chocolate and butter (not to be hot), then incorporate the flour mixture with cocoa and vanilla. At the end add 50g Oreo biscuits broken into smaller pieces. The resulting mixture is placed in the pan and on top I put the remaining 50g of Oreo biscuits broken into small pieces. Put the tray in the oven for about 30-40 minutes (depending on the oven of each one). When it is ready, take it out of the oven, let it cool in tray and portion after it has cooled. You will get about 8 servings.

Remarks: You can replace brown sugar with regular caster sugar. You can use any kind of Oreo biscuits but the best for this recipe are those with white cream. This blackberry does not use baking powder or other growth agent. The cake can be served with raspberry or whipped cream sauce.
